During the harvesting process, the sap is removed from the coconuts and the natural water content is evaporated, thus the remaining particles become this coconut sugar. There are no additional ingredients, nor is refining necessary.
There is some evidence that coconut sugar is lower on the Glucose Index Chart than cane sugar and we know that it does contain naturally occurring minerals such as zinc, iron, calcium, potassium, inulin fiber, and antioxidants. Granted you would have to consume a large amount of this sugar in order to internally receive the benefits of these minerals. Its the topical application that makes this a great selling point in body scrubs and bath soaks especially since the commonly used cane sugar holds no trace mineral value.
